




Ground Beef Enchiladas

This is a tasty recipe that gives you the feel good home cooking feeling.
Ingredients
1 1/2 pounds Ground beef
1 large Chopped White onion
12oz can Enchilada sauce
1 package Large Tortillas
1 block Cheddar cheese
1 block Monterey jack cheese
1 cup Sour cream
1 can Black beans
Directions
Preheat the oven to 375
- Brown the ground beef with the onion
- Once Brown drain the grease from the meat
- Pour about 2 ounces of the enchilada sauce into the meat and mix. Set aside
- Warm up the tortillas in the microwave or oven just enough to make them easier to handle.
- Slice both block cheeses and drain and rinse the beans in the can.
- Lay the tortillas out flat and scoop in some of the meat mixture and the beans. Add one of each kinds of cheese slices and fold the tortilla. Continue this step till all the meat mixture is gone. Place the tortillas in a baking dish and cover with the remaining enchilada sauce.
- Bake the enchiladas for around 20 to 25 minutes or until the tortillas look done.
