




Gazpacho
Ingredients
28 ounces Canned Tomatoes
3 cups Low sodium Tomato Juice
2 1/2 whole Peeled and diced Cucumbers
1/2 cup Peeled and diced Carrots
3/4 cup Diced Green pepper
3/4 cup Diced Red pepper
1/2 whole Diced Red onion
2 whole Garlic cloves
1/3 cup Red wine vinegar
1/3 cup Lemon juice
1 teaspoon Paprika
1/4 cup Oregano
1/4 cup Basil
1/4 teaspoon Pepper
1/4 teaspoon Tabasco sauce
Directions
- Place the tomatoes, tomato juice, cucumbers, carrots, green and red peppers, onion, and garlic in a food processor and process until smooth.
- Add teh vinegar, lemon juice, paprika, oregno, basil, and pepper and process to combine. Add the Tabasco sauce to taste and blind.
- Chill for several hours.
