Gazpacho

A cold tomato based soup

Ingredients

28 ounces Canned Tomatoes

3 cups Low sodium Tomato Juice

2 1/2 whole Peeled and diced Cucumbers

1/2 cup Peeled and diced Carrots

3/4 cup Diced Green pepper

3/4 cup Diced Red pepper

1/2 whole Diced Red onion

2 whole Garlic cloves

1/3 cup Red wine vinegar

1/3 cup Lemon juice

1 teaspoon Paprika

1/4 cup Oregano

1/4 cup Basil

1/4 teaspoon Pepper

1/4 teaspoon Tabasco sauce

Directions

  1. Place the tomatoes, tomato juice, cucumbers, carrots, green and red peppers, onion, and garlic in a food processor and process until smooth.
  2. Add teh vinegar, lemon juice, paprika, oregno, basil, and pepper and process to combine. Add the Tabasco sauce to taste and blind.
  3. Chill for several hours.
